Has anyone tried putting one of these on a USB to ethernet print server?

Yes, I got mine working connected via USB to a Raspberry Pi 3B+ CUPS server. It takes some work though. You have to download Daniel Oneill’s SeikoSLPLinuxDriver-master.zip file. As well as Create a symlink of /lib/cups/filter/seikoslp.rastertolabel to /lib/cups/filter/rastertosiislp. The printer doesn't work well with Chrome OS, but works fine with Windows 10 machines.

Can this print barcode labels to be used for Amazon's FBA?

It does do barcodes, several kinds, but I am not sure about the specific format you want. My suggestion, go to the Seiko website and look at the owner's manual or other documentation to answer your question more fully.
