Could I fit a 64-ounce Klean Kanteen on this?

No. Only Klean Kanteen sizes 18 oz, 27 oz and the kid's one will fit. These three bottles have the same diametre which is this bottle holder's MAXIMUM size allowed. Any bigger (40/64 oz) would not fit safely, not even by deforming the metal. Don't risk your safety. I bought four of them and have two attaches on my frame (road bike) and two behind my seat (requires additional mount).

Can it hold standard waterbottles. Like poland spring, dasani. Ect?

Yes, it holds standard 16.9 ounce/500 ml plastic water bottles perfectly.

does it come with mounting bolts?

No. My bicycle already had the mounting screws...Check your bicycle as most have them.

What is the maximum diameter of a bottle this can hold?

It will accommodate a 3 inch diameter bottle. I use mine with a 24 oz. Thermos. I would say this is pretty much the maximum size.
