Does it really hold through sweat like if you play a sport?

Oh it'll hold for sure, but might not let your scalp breath enough and cause a heat rash. I never had this in while playing baseball, but I know that other petroleum based products caused my head to get a heat rash when playing sports. FYI, Imperial Strong Hold holds my slick back in place during sports and washes out with just water, not paint thinner lol.

I know the product description says "medium shine" but I prefer a matt look. How shiny does this actually end up being?

It wasn’t a medium shine at all for my hair, it had a dry, matte finish. Really strong hold and sort of hard to apply due to the strength.

I need to wet my hair quite a bit to get it to slick back..i just received my can of monster hold and it says dry hair dry hands?

Just use a Hair Dryer to shape your hair anyway you like. The heat will let you slick your hair and you won't have to moisten or dilute the product

Would this work for an unruly beard?

I would never use this for my beard. Unless you're going into a beard competition and trying to form your beard into the last supper. There's many other beard balms and mustache waxes that will tame an unruly face fuzz without the possibility of meeting you not be able to move your face while wearing it.
