This year's honey is creamy with lemon verbena from beginning to end. A caramel sweetness with a tart green apple finish. The Pacamara variety is a hybrid cross between the Pacas (from El Salvador and named after the Pacas Family) and the giant elephant bean varietal Maragogipe. Its larger than normal appearance is the reason farmers from Las Mercedes call it "The King Bean" of Central America. Ken Davids of Coffee Review in his 93 POINTS - Aug 2014 assessment describes our El Salvador Las Mercedes Pacamara Honey as: An original and striking, though perhaps potentially polarizing coffee. Its juxtaposition of honeyish and cherry-like sweetness with savory notes that suggest dried mushroom and thyme will not please everyone, but will delight many. Even the floral notes combine savory and sweet. Quiet but richly vibrant acidity; full, syrupy mouthfeel. The complexity of the flavor consolidates but persists in the finish. ...The savory/sweet richness may be owing to the impact of the Pacamara variety; the honey processing doubtless further contributes to sweetness and complexity. This lot was created specifically for Klatch! We've established such a long and fruitful relationship with Lucia Ortiz from Finca Las Mercedes that we're able to have exclusivity on certain lots. Who would turn down this opportunity? Their coffees are amazing! This particular coffee is honey processed. The process starts with the skin removal from the coffee fruit immediately after picking, but the beans or seeds were dried with at least some of the fruit pulp or “honey” still adhering to them. As a result, the pulp adds sweetness and a bit of a fruit taste to the bean.
