How long is the cable on the rectorseal ez trap 210?

If your condensate pump is next to you air handler its plenty long.

Can the assembly be reversed so the inlet and outlet can face the same direction?

Yes you can, the fittings are still loose and can be configured the way u want it.

Is the open top of U (black piece) supposed to be above, even with, or below the switch end of the U ?

The Black cap with the wires is suppose to be the highest point (up)

How does the shut down work? Where does it connect to shut the system down?

The shut down is a float type devise located above the trap. If the water starts backing up the float goes up and closes the circuit. The wiring attached at the same location that your thermostat connects to in the hvac unit. It is an closed circuit until the float goes up and opens the circuit causing the unit to shut down.
