Can I plug the backed up drive in and read from it; or does the software encrypt files?

You can turn off encryption (and compression), then the backup files will be in their native format, and the file structures are maintained too, so you can just read from the backup.

How to select incremental backup?

I don't know, I wish it was easier to use, it seems to back up the whole PC everytime which fills up my external drive constantly. I hate Norton but at least it only added new files to my backup sets, not all new copies of the PC.

Can you create an image file of my C drive or operating system of windows 10 on another drive?

Yes. Just backup the source drive to an external drive and create a boot thumb drive. The external drive image can be restored to another drive provided it is big enough.
