Does this cable differ in tms ofsound quality than the original cable supplied with the headphone?

no, this is the original cable from audio technica so sound quality and build quality is the same as the cables that came with it, works for both m40x and m50x

Will this fit the AUDIO TECHNICA ATH-ANC27?

This does work for the ANC27 (I bought it for that) HOWEVER it is a completely different cord than the one that came with the ANC27. This cord is thicker and seems higher quality than the original, however the side that connects to the headphones has a very different locking mechanism and doesn't lock on the ANC27, it does stay in place on its own though so not a big deal.
