Will this hold a 2lb block of cheese?

I had a 2 lb block of cheddar. I cut it to fit. I always cut it anyway so I really don’t understand the other answers. Its not rocket science. I purchased the cheese at Sams & It’s been in there for 2 weeks and it’s still perfect. Purchased another one because I cook with a lot of cheese and my whole family loves cheese.

is this big enough to store a Velveeta cheese brick?

I don't think so. I don't think it is tall enough. There is a tray that sits inside of it that you put a damp paper towel under. That decreases the internal height by enough that I don't think a standard size brick of Velveeta would fit. Also, I don't really think it would work at keeping Velveeta "fresh" anyway. The idea of this is to create optimal humidity for storing real cheese.

How often do I need to change the paper towel?

I usually eat the cheese up before I change the paper towel. You should check and ensure the paper towel is moist. This one of the big things to look for. It's likely by day 3, your towel may start to feel dry.
