I don’t know why you couldn’t...they are styrofoam so would not be a problem with the humidity.

Would these melt if a radiant convection baseboard heater was near them?

Id say yes, to be honest these are definitely not worth the price. We used these on our ceiling and we constantly have to tear them off and replace them. Some of the caulking we used even ate through the foam material..

Can you staple them up ceiling ?

I don't think that would work out very well. These are extremely thin and soft. Staples would likely just rip right through the material. The fast grab type of caulk has been very easy. We've done 2 ceilings with these tiles and found them extremely easy to work with so far.
