Let me start off by saying that I am a professional cook, not a chef so my equipment requires high durability and functionality. This honing rod is made of a very fine ceramic unlike white ceramic honing rods which I find remove to much steel and seem to sharpen rather than hone. This honing rod has worked great on all my knives, especially my japanese knives. I love the grooved sides as well as the smooth sides. Being made of ceramic, one would think that this rod would be fairly easy to break but it has held up very well to being transported to and from work and being used multiple times per shift on various knives with excellent results every time. The title says it all, best honing rod I have ever used and worth the high price tag in my opinion. May not be necesarry for the home cook who hones there knife once a week or once a year for that matter but for the guy who is dicing, julienning, and cutting rounds of onions daily it will stand your edge back up nicely especially on knives made of very hard steel.

Have tried many sharpening tools over the years. Top shelf stones, motor driven, drag knife thru wheels devices, you name it. Sharpening stones from 400/1000, 4K, 8K, 12K.. came the closest to preparing our very good quality knives. But never to the level I felt it should be. Until now. Holy schnikes. Was about to spend more $$ on similar top rated knives. Not now. A few passes with this honing rod and things reached a level that I had never seen before. I mean, holy cow. Exceptional sharpness and in only a few strokes. What I saw instantly was my stones techniques were correct. But I could never reach the promised land. Until now. I am SO happy with this what I feel is a very inexpensive honing rod. I do wish there was less medium quality plastic in the handle area. But that wasn't enough to ding a star. This honing rod led me to the promised land, finally. Guess what I will be doing this eve? Bringing several of our knives to this top level.

This size fits perfectly into my Chef Sac back pack and does a wonderful job with honing especially with the grooved and flat side. If my edge is to far gone to bring back with a strop I'll run it on the Mighty Mac and strop it and get a few extra days out of an edge depending on usage (professional kitchen).

This rod is terrific. At HRC 76 it is much harder than any knife steel you will come across (even the super-hard Japanese knife steels top out at only HRC 63 or so). I use this rod on all my knives (not just the super-hard ones). I run knives very lightly over the rod (at a low angle), with almost no pressures and for only 5-10 strokes per side. This is essentially the only care (other than washing and thoroughly drying by hand with each use) that my knives need. I haven't used a stone on a knife for over a year--and I cook a lot. This is a tool that any serious cook or anyone who likes to take good care of their good knives should have and use regularly.
