Q: using this to replace a knob for an outdoor patio umbrella stand for a a standard 9' market umbrella-what is diameter of the knob itself?

The maximum clearance required is 2.25". This is the crown-to-crown diagonal distance across the knob, not the diameter. Measuring from crown-to-valley (across the center of the five-crowns) the distance is 2". There is a small round shoulder immediately beneath the hand-held part of the knob that is a 1 inch diameter cone. This is where the shank is captured into the knob That shoulder extends 1/8" below the hand-held portion. The depth of the hand-held portion is 1/2". The distance from the top of the knob to the bottom of the shoulder is therefore 5/8". The 1/4-20 shank extends 1.5" from the bottom of the shoulder.

Q: is the metal stainless?

I'm no expert on identifying stainless, I don't think so. My application is indoors and not exposed to any adverse elements.

Q: What is the length of the metal screw part? I don't think I understand the description, as it seems to be enormous - 9 inches long & over a foot wide.

Gil, reviewing he specifications as you likely did you would get the conflicting impression the star knobs might be huge, but they're not. I guess they were describing the packaging size, which would be about right. For this particular part #, which I bought to build a couple of woodworking jigs, you get qty 10: 1/4" threaded shaft that is 1 & 1/2" long that is permanently affixed to the star knob head. I was very pleased as they worked as expected and hoped.
