Including the height of the lift plate that the door would be placed on I would estimate it to be 1".

why is this not able to handle doors taller than 7'?

Don't know why but I did transport doors over 7'. Always move sideways while transporting, much easier and eliminates tipping forward or backward.

Will this work on commercial doors 8 feet tall

No. You want the Telepro 40100 to handle doors 8' tall. The 3070 handles doors up to 7'.
