Q: Does the VS-12 work with the vacuum hose?

I just contacted Nesco and was told they do sell a hose for the V-12's vacuum port, which is their part #200-09543 priced at $8.99 +S&H.

Q: How does gentle mode work? is it reduced pressure? half pressure? a shorter vacuum time? 5 seconds rather than 10 seconds? ty

"Gentle" setting provides less vaccum pressure whereas "Normal" setting provides full vaccum pressure. Also, there's sealing settings..."Dry" setting provides a shorter sealing time for dry foods, "Moist" setting provides a longer sealing time for wet foods and "Double" setting provides a double seal for extra security. The bags used are sous vide bags.

Q: Can a "universal" 7.87 inch wide roll (8") be used in the nesco vs-12 deluxe vacuum sealer machine?

Yes, in fact, the unit accommodates up to 11.8" wide roll or bag.
