Is this meant to discolor? I cut some veggies and washed immediately after and now the knife has blue discoloring

Washed and dried? Maybe hard water of you didn't dry it. Contact Dalstrong directly not on Amazon they have excellent customer service.

Does black color wipe out after sharp with stone?

No, it does not. It is a great product!

Somehow we lost our cover to this knife. Is there a way I can just buy the cover?

If i shape this knife with a shaping stone is the black coating comes out?

Thank you for your question. There is an uncoated area above the knife edge so that the coating won't be scratched off when time comes that the knife needs to be sharpened.
