We infuse our chocolate with an essential oil of peppermint. This creates a refreshing taste of mint that is not overpowering. We add in Arriba Nacional cacao nibs from Ecuador for a nutty crunch. Peppermint has a long tradition of medicinal use, with archaeological evidence placing its use at least as far back as ten thousand years ago.
