Mi Amere Dark Pistoles 58% (11 lb)

Bite-sized with a satisfying little crunch, these chocolate “chips” have the perfect balance of flavor. They’re smooth from a longer conching and not too sweet or too bitter and no off-putting fermentation flavor some other chocolates have. The bag arrived in an insulated bubble mailer and with a frozen ice pack. I haven’t baked with these chocolates. They’re too good for baking. They are not too good for serial munching. I package them and take them to work, I have some by my bedside, and I have mailed more to friends across the country. These are worth sharing. And they’re absolutely worth keeping all to yourself. 10/10

I requested a flourless chocolate cake recipe from the baker in a local upscale restaurant. When I inquired as to what kind of chocolate was used in the cake, she replied "Mi Amere Dark Pistoles." I have used premium chocolates before, but this is the only one I will ever use in this cake recipe or recipes needing chocolate chips. Everyone agrees this cake is heavenly, melts in your mouth, and tastes just like the restaurant version thanks to Mi Amere Pistoles! The box is huge, but you can weigh the amount you need for each recipe or bag some to share with family or friends. Worth the cost!

I was originally sent the wrong item, but after contacting the seller, I was sent the correct item right away. The chocolate arrived today, in excellent condition. It tastes great, as I expected. I intend to use it not only for chocolate chip cookies, but for all my baking and pastry recipes calling for good quality chocolate.

I arrived here from Chef Steps Ultimate Average Cookie. I have made the same recipe swapping out only the chocolate and every tester overwhelmingly preferred this chocolate for it's taste and lack of after taste. The pistoles make a huge difference by achieving cookie, chocolate, cookie, chocolate...etc.

This is what I use for choc chip cookies. Perfect size. The package arrived more quickly than I thought it would--just a few days including a weekend. I got the 11# because it was a better deal and I will vac-seal the remaining
