I found the mix too satly
I only added to the sausage mix minced pork and water nothing else, and followed the instrutions on the pack to make my sausages is there a reason for the salty taste, I used to be a Butcher in my younger days and made 100s of pounds of sausage every morning and they never tasted saltyis there a reason for this taste be nice to know

Pretty much spot on
Having tried almost all the Cumberland in the North, I can say this is as close as possible. I add more Sage, Salt and Pepper, but that's just for my taste. Put this with the natural 38mm Hog casings, Air Fry or slow smoke and these are bang tidy

Really really tasty
if you want some scrummy sausages then look no further. This mix makes really good sausages. I used 3Kgs pork shoulder, 1Kg of pork belly. Keep to as near to frozen as possible when mincing it and I found from previous experience that once mixed, leave in the fridge for 24 hours so the mix really marinates. I added extra black pepper but that's just individual preference. I also use Tongmaster collagen skins as they give a more professional looking sausage.
