You have to load a custom firmware onto the ESP32, but yes you can program it using MicroPython.

Spec says this devkit has an onboard temperature sensor. Does anybody know how this can be accessed? Datasheets don't seem to mention it.

AFAIK it is used to shutdown the board if it overheats and is not directly accessable. It may be setting a bit in a register somewhere (e.g. cool = 0, hot = 1) which can be readable, but I assume you are after an actual temperature and I don't think it is that sophisticated.

What processor modue do each variant use? eg esp32 or esp32C3 or esp 32S2 or esp32S3

can these be ran at 12V

Wouldn't advise it. Would probably burn out the on-board regulator (or other component). Stick to 5V / USB. Otherwise use a step-down regulator from 12V to 5V.
