Yes you can control both the temperature and timing settings on this. It is a very nice piece of kit and in my opion, well worth purchasing ;)

I use 189 minimum on first bake, then i increase next time round and so on

any mouthpiece replacement to a 10mm male joint?

If you go the Nectar website they have replacement mouthpieces, however they never seem to have them in stock; I oredered 2 replacements 6 weeks ago, yet srill do not have them in stock (the website does NOT say they are out of stock btw!). Also on their website, they sell a nifty glass bubbler attachment!
