What is the shelf life of the pectin?

I found a box of Sure-Jell that had an expiration date of 2012 and just used it 2 days ago and the jam turned out perfectly. I don't think pectin goes bad unless it gets wet or hot.

How much of this equals a packet of Sure-Jell?

I used 6 Tbsp for my black raspberry jelly and it was too much. My jelly is so thick I can't spread it. I will be trying 4 Tbsp - which is the amount in a Sure-Jell box - next time.

I have the ball jelly maker, does this measure out the same as ball pectin?

If you are using regular pectin, our Fruit Pectin should measure the same. Hoosier Hill Farm Fruit Pectin cannot be used in reduced sugar recipes. If you are substituting for a box of fruit pectin, measure 6 Tablespoons from our bag. Thank you!
