This honey is "raw". It comes from the Manuka Tree(Leptospermum Scoparium). The MGO( methylglyoxal) is a natural compound found in significant qauntities in only Manuka honey produced in the wild from Manuka trees. The MGO has antinflamatory, antibacterial, and wound healing characteristics. Levels of MGO over 150 mg/kg are directly responsible for theses actions. This 550mg/kg is one of the hiest levels of MGO I have found.

Thanks for asking. Its a good question. Depends what do you consider a traditional honey. There are more than 700 types of honey ( known) produced. The only Manuka monofloral honey becomes a unique thanks to the high Methylglyoxal content thanks( again) to the Manuka Bush( or a tree). The taste is also depends on age of the honey.
