Wow, this is a crazy textbook !
This textbook is like 15 pounds, and there is everything from the history of modern food service to desserts from the modern day. There are recipes and techniques, ingredient breakdowns, math for culinary, and tons of other important skills and information in this book. I would recommend this book even for people aren’t students. You can definitely learn a lot from this book.

Serves Its Purpose
Bought this book for culinary school and it worked well however slightly incorrect on some recipes but our chefs were able to help us figure it out. Overall, I am happy with my purchase. I recently graduated school and I will be keeping my book!

I ordered this for my culinary school and I use it in many of my classes! It is HEAVY and very THICK, but I'm so grateful I didn't have to pay an arm and a leg!

I'm no professional cook and not even interested in going to cooking school but I'm a guy that enjoys to cook at home and always finding new ways to improve my cooking. This book has alot of very good info and lessons to help you become a better cook!

In my haste, I bought "Professional Cooking 9th Edition", when I got to class, the teacher stated that we needed the Canadian Edition, so I contacted Amazon, explain the situation, they refunded my money, and I was able to purchase the correct edition. My only complaint about this is that had I bought the E-edition from my school which was $10 more, I would have got the registration for E-Culinare which is the online recipe tool. if that doesn't matter to you, then this is a great book, but for school...I forked out the additional $32 for the reg. code, and it was worth it! the online recipe tool houses all the recipes and does the calculations for you to scale it down by half, quarter, 0.65% whatever you need.

This book is one of the best culinary student references. Great reference for standardized recipes. Good base of knowledge for students, cooks, chefs.

Amazing book and very useful if your a student or someone that aspires to learn how to be a chef. Package arrived safe and in good conditions. My only complaint is that the delivery person just dropped it in front of the door while it was poring raining without even ringing the bell. Luckily I was home and managed to see him dropping it and run away to not get wet, I saved the book but the box was wet and damaged by the time I picked it up. Just in time - made it just in time
