We like the heavy, commercial grade design of these pans - the reinforced lip and the heavy handles are a must-have, once you get used to having those features. Thinner pans are flimsy, and oftern warp in the higher oven temps. These do not warp and support the heaviest of contents without any sag or give when holding by nthe two end handles.And they are accurately sized for the volume stated. 7.5 quarts of water just about fills the pan. We never fill them to capacity as most cooks do not for safety sake. Highly recommended.However they are uncoated aluminum and as such they do stain, darken, and can eventually pit if not treated properly and cleaned after every use. It depends on how you use these. As principal food baking, broiling and roasting containers they need to be squeaky clean, so plenty of elbow grease is needed after most uses in the oven or on the stove top where food directly contacts the pan. Sometmes a scrubby pad isn't enough and you need to resort to plain old steel wool. After a few years, there will be a darkening immediately underneath the rolled lip edge and the handles that is tough to get at to scrub away. But these are not intended to go from oven to table - these are strictly kitchen ware. Keep 'em clean, don't abuse them, and they will serve you for many years.

Per the recommendation of a famous celebrity French chef, I purchased this sturdy aluminum roasting pan to cook the holiday turkey. Next to copper, aluminum's stellar heat conductive properties and this pan's thickness prevented the burning and scorching of the meat's juices. With a spatula, I easily scrapped away the crystalized juices into my sauce pot. This pan is a low cost no frills, yet professional piece of equipment every serious home cook should own.

This is advertised as a "heavy duty" baking/roasting pan. I got it and was amazed to find that there is truth in advertising. This is going to be passed on to family members when I pass. Buy one and have it for a lifetime.
