They look like they just barely cover the ankle - do they not "ride up"?

Actually they cover the ankle with about 1.5 to 2 inches to spare above the ankle. They DO NOT ride up. The "gel" not only acts as a cushion, but it also keeps the pad from moving at all. That is as long as the pad is on your skin and not over a sock, for instance. I have used this for my hockey boots for many years and have never been disappointed. Hope this helps.

Will these fit a large adult hockey player?

Yes, they can stretch to fits adults as well. Just a side note; I find that many hockey players use the lace bite pad if that is the trouble area. If its a ankle or top of skate blister problem then the ankle sleeve is ideal.
