Agar Agar Powder, 4 oz. (2 Pack)

I bought 4 brands of agar from Amazon and compared them side-by-side. To 1 cup of 50% apple juice (1/2 cup of juice + ½ cup of water) I added 1 teaspoon of agar. Then I heated it almost to boiling, stirred and let cool down to room temperature. “Hardness” is how hard the product is. The harder the better, meaning you have to use less amount of agar to achieve same results. “Taste” means taste. Ideally agar should have no taste at all, so it won’t change the flavor of your dish. Hardness and taste are rated on scale from 1 to 5, with 1 is the worst and 5 is the best. When I opened the mailer and retrieved the product I noticed that there was a hole in the package. A small amount, about 10% of the product had spilled into the mailer. Don't know how the package became damaged because there was no sign of damage to the mailer.

If you want to thicken something like a donut icing, you must have this stuff. A very tiny bit, maybe 1/4 teaspoon, dissolved in boiling water and added to your recipe does the job. Experiment with this stuff, a little more and a little less.

I like this product very much. Being a vegetarian/vegan, it's nice to know that there are products that do the same as eggs and gelatin..
