I’ve been extremely careful with this knife. Unfortunately, I was very disappointed with the edge retention. Don’t get me wrong. It’s still sharp, but not like it should be.

I love me a sharp knife but this brings using a knife to a whole new level. It's now a cutting experience! This thing is OMG sharp. It's smooth. It glides through food. It's gorgeous. It's SHARP! I'll be buying more Shun cutlery but I'll have to find a part time job first ;) If you enjoy cooking, do yourself a favor and try this knife.

Incredible knife. I’ve had German Henkel knives for ever and Japanese steel is superior. Light and incredibly sharp. Highly recommend.
