Sometimes, its the simplest designs that work best. Plus, the French know something about bread, so there's that whole channeling thing.

Insanely practical
I was a professional chef for many years. This scraper is by my side in the kitchen at all times. Not only is it the best dough and pastry scraper by far, but it doubles as a bench scraper because it is sharp and durable. I use it to carry everything from the cutting board to the pot, and then use it to clean up my work area without scratching the surface of everything with a clanking metal scraper. It works like a sharp squeegee keeping everything ship shape and so preserves your towels. Get a few of these Matfer Bourget nylon scrapers and throw those useless, flimsy white scrapers, and most of your rubber scrapers into the trash. This utensil will change your life.

I love this thing!
What a simple, perfect tool! It has quickly become my favorite bread-making tool, turning dough out of bowls and buckets with a decisive, satisfying scrape that leaves the container dough-free, and cleaning off my dough board with the flat end just as efficiently. It is SO much better than the other plastic scrapers I have and I'm glad to own it.

Firm yet flexible
I’ve used this scraper for 3 years now and love it. It is firm so it scrapes all the dough cleanly, yet flexible for the curved edges of a bowl. I used another one which just didn’t do the job as well.

Hope it lasts considering it cost six times as much as the dough scrapers I'm replacing
I bought Matfer's Nylon Dough Scraper to replace two plastic King Author Flour branded dough scrapers that are fraying. Specifically, I'm replacing KAF's orange-colored 'heavy-duty' option as well as their plain white dough scraper. Matfer's feels sharper in my hands than I expected it would. I'm use to the pliability of KAF's softer material that bends easily in my small hands (I am easily able to scoop out dough from deep bowls with KAF's plain white dough scrapper because the scraper will bend). Matfer's has not been as comfortable to use as the white KAF dough scraper. What's more Matfer is longer and larger (it's not very comfortable to hold in my hands. For reference, I wear small-sized exam gloves). I'm hoping Matfer's stiff, no-give nylon will be the last dough scraper I ever have to purchase because I consider it expensive at 12USD.Two Year Update:Matfer's dough scrapper is still going strong. I haven't seen any visible evidence of material degrading, but I admittedly am not baking as much as I once did. I still find the no-give nylon to be uncomfortable when, say, portioning out balls of dough and don't like that the scraper doesn't bend (I'm not able to scrape out the sides of a bowl as easily and cleanly as I would like to).Unexpected upside to the stiffness of Matfer's dough scrapper- I recently upgraded the memory to my computer and needed a nylon tool to disconnect the battery before removing the factory-set mem sticks. I sat there for awhile staring dumbly at what I could possibly use that wouldn't cause static to accidentally build up whilst working on the computer upgrade...stiff, flat, and nylon, huh?...I went for my Matfer dough scrapper--hoped popping up the connector wouldn't ruin this 12USD scraper--and tried disconnecting the battery. It actually worked really well; and I'm happy to report the scrapper doesn't look any worse for the wear :D!Bottom line: Matfer's dough scrapper truly is solid with very little give or rigidity. My original rating of 3/5-stars remains because it's uncomfortable to use for portioning put dough (at least for my small hands it has been). And if I'm working with a particularly sticky dough Matfer's dough scrapper absolutely will not bend to clean the side of the proofing bowl, I have to reach for a spatula to get the job done. I am glad that, as far as I can tell, I haven't seen any evidence of degrading material.

Work well
A little overpriced but according to my daughter who I purchased it for, one of the best plastic scrapers.
