Really tasty! Vegetables rehydrate beautifully.
I have a hard time keeping track of produce I have purchased. I store all of the vegetables in one compartment in the fridge, and always seem to end up forgetting what's in there. So a lot of times, I think "oh, yeah- I know I have mushrooms" and then I rummage through the bags in the compartment and find a freezer bag full of slimy dark things that once were mushrooms. I am working on my refrigerator organization skills, but it's a challenge. Also vegetables, at least where I live, seem to go bad a lot faster than they used to.I make stir fry fairly often, as it is economical, and easy. It’s a good way to stretch expensive groceries, like meat. I’ve used frozen vegetables in stir fry, and that works ok, but I always end up wanting more flavor and variety than the frozen vegetables can provide. I looked around, found this mixture, and saw it had promising ingredients that would hopefully impart more Asian flavor than I had been getting from frozen peas and carrots and corn, and some chopped up green onion.I measured out a portion of the mixture in a glass bowl. It was roughly three tablespoonfuls. The first thing I noticed was the nice tangy aroma coming from the YUHO mix. The dried veggies aren’t teeny tiny either- they are all about 1/4” sized pieces. There were no unpleasant tough shards, or stem pieces.Although carrot is the first ingredient listed, I don't find this mix to be (and taste) super carrot-heavy. I could really smell the kimchi, and also the nice aroma of the green onion and red bell pepper and shallots, and thought- this is encouraging. I poured some boiling water on top of the mixture- just enough to cover what mix was in the bowl, plus a bit more water above the flakes. I covered the glass bowl, and set it aside.I ended up making the stir fry several hours later, as I needed to take care of some stuff. I checked on the YUPO vegetables, and they had all plumped up nicely. They were surprisingly vibrant and colorful. The scent coming from the bowl was now quite flavorful and appetizing. They had pretty much doubled in volume, and had absorbed almost all of the liquid save for about a tablespoonful. I added the reconstituted veggies and the remaining water they had steeped in to the small cast iron wok after I had sauteed the chicken chunks in it in a bit of oil, with garlic and ginger. I let the chicken/rehydrated veggie mixture simmer for about a minute, tossing it, and then tasted it.There it was- flavor. Finally! The veggies also were nicely softened, but were not mushy. They definitely didn't taste bland and boiled. I added some cooked drained ramen noodles and sugar free orange ginger sauce and a couple of shakes of low-sodium soy sauce to the wok, tossed everything really well, and lunch was ready.It was delicious. And also, it was really easy. I didn't have to play the dreaded “are any vegetables in here still fit to consume?" game in the fridge. I also didn't have to peel anything, or chop anything up. The YUPO mix imparted a lot more flavor and taste than I was expecting. The vegetables also didn't taste like as if they had been dried. They didn't have exactly the same texture as fresh or frozen veggies of course, but they were still pretty darn good.I had used maybe three tablespoons of the dry mix, as I had eyeballed it. I found that was more than enough mix to work in a small wok of stir fry. (And their presence in the stir fry was that of vegetables, not little particles of something.) So even though the container looked smaller than I was anticipating when it arrived, I realized that this mix had turned out to be a bargain, as it the vegetables rehydrated so generously and contained so much flavor. I am only cooking for myself, but I think you will find the container will last longer than it looks like it might. I will report back if that changes.So if you suffer from a case of advanced produce amnesia, as I do, and you have a small kitchen and want to limit your meal preparation work load and also are tired of wasting money on vegetables that seem to go bad within two or three days of purchase, I would absolutely try this mix. It is *not* spicy: it has a tanginess, but it is on the level of "spicy" that fresh yellow or green onions or shallots have. You can taste the kimchi, but it's a nice hint of flavor and doesn't take over, so if you wanted to add these veggies to a teriyaki or something like beef stew or chicken soup, it would work great for those dishes. And of course it would be fantastic to add to ramen. I am certain kids would not think this mix is too spicy, or weird tasting. I don't care for too much spice or sharp flavors in my food, and this YUPO mix has just the right level of zestiness for me. And lots and lots of flavor.I would, if you can, take the extra time to rehydrate the vegetables. I wish I hadn't gotten busy and distracted from keeping track of how long it took the flakes to fully rehydrate, but I'm guessing about half an hour of steeping after having the boiling water poured over them would be sufficient. I will edit this review to report how long it takes for them to plump up fully, if I remember to do that. I don't think it's possible for them to "over steep" though, as I left them sitting in the bowl in the water for a good two hours, and they had not turned to mush.I'm really glad I found this YUPO dried veggie mix. It's added a ton of great flavor and it's going to save money, too, as I won't be having to throw out forgotten carrots or bell peppers (etc.), or green onions that have shriveled within 24 hours of purchase. I will continue to order this mix as long as Amazon stocks it, and I highly recommend it.

Such good stuff!
I get cheap cup of noodles and gussy them up by adding stuff. This dried kimchi mix is so good. It’s not hot or spicy, I don’t know why it’s called a kimchi mix because it’s not even particularly cabbage heavy either— but it is awesome and adds a lot of flavor and texture to boring ramen.

Great for ramen or miso soup
It's a good product I just wish there was a bigger size to order. And they don't taste like plastic when you're done cooking them.

Fresh is better
The size could be better for the value of money, texture is ok but the taste is sort of chemically , easy to use but the quality is not what I expected especially for the price.

Easy to use.
Very nice flavor, we use them to make our own Ramen. Smaller size jar than I thought but you only need a little bit and will last quite a while.
