Q: Could this work to seal cracks instead of a soundproofing caulk/sealant?

Hello. Caulking/Sealant is the best solution when it comes to "filling" a crack. On the other hand if you were looking to create more of a "seal", such as around a door frame, then this could possibly prove to be effective since it is sticky on one side and plastic backed on the other. Not sure how well it would hold up compared to regular foam tape.

Q: Can I apply this product to the underside of a floor joist, and screw drywall through it?

Yes just put it up and screw the drywall as normal. I do recommend using 5/8 drywall for a better sound deadening effect but this stuff does help a lot.

Q: I am soundproofing my ceiling. I am already installing mass loaded vinyl between the joist and the drywall. Will this tape improve things further?

If the sheetrock is screwed directly onto the vinyl, probably not and maybe worse (multiple air gaps can be worse). Consider QuietRock, heavier sheetrock (5/8"), or greenboard instead.

Q: Could this work just as well for walls ?

It does work well for walls, but it is difficult to stick to vertical surfaces. You have to roll it or press it on firmly and sheetrock or cover the same day or sooner. It will tend to fall off if left overnight. Used it to isolate the noise from a large wine cellar cooler - it works well, especially with heavier greenboard. Exterior walls in same room did not have tape and they are very "live", the walls with the tape are very "dead".
