Q: How many N2 cartridges would have to be injected into the coffee? Does the faucet have a restricter inside to assure the smallest bubbles?

2 nitrogen or 1 nitrous oxide whip cream charger. Not sure of the restrictor. I bought this to test sales of nitro brew at my business. Not good for large quantities.

Q: what is the max pressure of keg? if i add nitro regulator with 18g is it safe for great nitro cold brew at 40 PSI?

No idea, it has a built in relief valve
