how sturdy is this? when properly locked in does it rock back an forth? does the pole supporting the wheel touch anyones thighs?

This is VERY sturdy. This does not rock back and forth. I am somewhat of a fatty and the middle pole does not get in the way of my sexy thighs.

Can I ask the dimension when fully fold it?

The bare wheel stand folds down to 15 inches wide X 27 inches long X 8 inches high. However, when you mount a steering wheel on it, the whole package gets much larger.With my G27 steering wheel, pedals, and shifter mounted and with the bar for the steering wheel set to a height for me to race with, the whole assemblage folds down to 20 inches wide X 33 inches long X 20 inches high. Shortening the length of the steering wheel mount could reduce the package to 20" X 26" X 18." If you use a G29 wheel without the H pattern shifter, the width goes down to 16 inches, (16" X 26" X 18"). The wheel stand by itself weighs about 13 pounds. Adding the G27 wheel, pedals, and shifter brings it up to about 30 pounds, a bit hefty for carrying;.

Is the height of the shifter plate adjustable? I would like to have it as low as possible, near the base of where I'm sitting to simulate a car.

No the shifter for the Logitech g25 g27 is next to the wheel and not adjustible. While this isn't like a real car. Modified race car do put the shifter as close to the wheel as possible because you can go from te wheel and the shifter much faster. I've gotten use to it and it helps. The height is good for the logitech shifter but, not the thrustmaster 8 speed since the thrustmaster is much taller then then the logitech.

Is left foot braking possible, without worrying about too much obstruction from the middle pole?

I'm 6'2" . I have no issues with left foot braking.
