Yes you can but they're pretty light weight so the squirrels may just laugh at you. Nobody deserves to be laughed at bt squirrels.

Do you have to plug in all 4 or can you just plug in 3?

No you don't have to. Plug in just 1 if you like.

How do you turn them on and off? Is there a switch or do you plug them in/unplug?

about halfway up the cord there is a switch to toggle all 4 lights off and on, they do not turn off independently just as a set. One idea is to also use a timer on the outlet and leave the lights on so that they turn off and on based on the time of the day.
