Great beginner's book
SEM for non-statisticians. This is a great introductory book written, mostly, in plain English. It answered several of the questions I'd had from my previous attempts at learning SEM, explained concepts I'd never really understood before, and walked you through the process complete with screenshots and press-this-button-next type instructions. It is an introductory book, so you may need to move onto something more advanced once you start getting into the nitty gritty of dealing with real, problematic, data, but you'll be much better equipped to do so. Recommended.

Best text for SEM basics and the AMOS graphic interface
This is the best text available for both a thorough coverage of SEM basics and the AMOS graphics interface. It has some material on panel data and multilevel data.

Great textbook - required for a class. Breaks down SEM in an easy to understand way. Good overview of regression as well.
