It is a great cutting tool in the kitchen. If you could have only one knife, this is it.
Worth every penny. This is now my go to knife. It is used 90% of the time while the other ten knives sit there and watch. Holds a good edge.

I like this knife!
I cook at home, so I’m not using it in a professional environment, and I’m not a “chef”. So take this for what it’s worth. But after a month of owning it, this has become “my knife”. I’ve been using the same 3 knives for More than 20 years. It was my 8” chefs knife that did the lions share of the work. But it was beat. So I started looking around for something new. I had the odd thought of trying out a 6” one. So I ordered a couple to try out.I kept swapping around for a couple weeks, and the Mercer ended up being the one I started grabbing more and more. It’s all about the way it fits my hand. And I’m liking working with a 6” blade. For me, confidence in cutting comes from how the knife feels. And for me, this one feels really good. I like the handle, and it feels solid even when my hands are wet or damp. It’s holding an edge just fine, and I feel confident using it. I’m actually surprised I ended up liking working with the 6”, and I have a longer carving knife and shorter paring knife, so this ended up fitting in well.Now, this is a very short term review so far. I’ve only owned it for a month, and for almost 3 weeks of that, I was using it part time to figure out which one of the three I was testing would end up being the one I used. But I think it’s going to be fine longer term.UPDATE: 3/3/2021 - So now that I've been using this knife for a couple more months, I wanted to update this review. I still really like this one, and it is still my main knife. But it didn't totally replace my 8" knife. I'd say I use this one about 80% of the time. It's a great size, and has kept an edge well (obviously I sharpen it). There are just some things that are easier with a bigger knife. At first I was trying to have those work with the smaller one, but I found that wasn't practical. So 80% this one, and 20% my old 8" knife. And that just works for me. Overall it is holding up really well.

Sharp and comfortable knife
This is my second Mercer knife and I'm loving this one as much as the paring knife. I'm learning how to quickly slice produce and this knife is awesome. It has plenty of room under the handle so you're not bumping your knuckles on the surface. Comfortable grip and very sharp. Nice balance so you can move quickly. Really makes cooking fun! Highly recommend these knives!

Customer service and quality
This is a very nice knife . You best get one now as I can't see the price being that range for long . I have 3 now and there as good as my Wusthofs . Great Balance and steal.

Best knife I have ever used
This knife stays very sharp even through heavy use. I do a lot of cooking and have had many knives throughout my 72 years, this Mercer is without a doubt the best. The 6 inch blade balances nicely in your hand and is comfortable to hold.

Best is relative - this is my new favorite chef's knife.
I am a home cook with aspirations to improve my culinary skills. I am also an artist who has worked with and for a few knife makers, so i know more than the average person about them.This is not a high-end knife, but it is for me, the perfect chef's knife. The rubberized grip is very secure, even with wet hands. The 6" blade length is what I feel most comfortable using day to day, even though 8" or longer blades are the standard. The thin profile is exceptional for fine slicing and dicing, and most of my time is spent on prep.It's not flashy, but it is well made with a full tang and good steel that holds an edge (according to reviewers). It's stainless, not high carbon, and it will not impress anyone, but it is well suited to a kitchen and also very affordable. This is fortunate because my wife has already shown an interest in it... and I can see I'm going to have to buy another one!

The perfect everyday kitchen knife
I don't know why it took me so long to get rid of my old not-so-sharp kitchen knife--it was a wedding gift from years ago. Anyway, I saw this knife advertised in an issue of "Cook's" cooking magazine. I liked the description and price and decided to order the 6" knife. Oh, my! Why didn't I get this knife sooner? It is wonderful compared to what I was using--nice and sharp, easy to grip, and doesn't take up a lot of room. I am very pleased with the purchase and probably will order other sizes. Recommend for anyone who is a kitchen cut-up!
