Can I install this on 2014 Honda Odyssey? If yes, do I get instructions to install?

If a trailer hitch is available through your dealer, then an aftermarket hitch - like the Curt - can be installed. The frame of your van has been pre-drilled and threaded. It's a matter of finding the right hitch. Instructions are straightforward. Line up the holes, insert bolts, tighten. Depending on how many miles you have put on your van, you may need to purchase a tap and clean out the threads. I did. It helped.

Does this come with the required mounting hardware (washers & bolts) or do I have to purchase that separately?

Mounting hardware is included. Regarding the comments about cleaning and tapping the threads, you may not have to. My car is 6 years old with 139k miles and threads were clear.

I bought this rack but I feel it's too heavy and overkill for transporting the bikes. Why did you pick this instead of class2 version?

It has a 2 inch receiver. All my current tow balls, bike racks, and cooler platforms utilize 2 inch stock. I also use this hitch receiver as a recovery/towing/winching point. I wanted the strongest available bar assembly with the greatest weight rating. It may be over kill for a bike rack , but I now a have a very convenient way to tow my Van out of mud or snow with out crawling under the Van to look for an attachment point.

If I install this hitch to 2005 Honda Odyssey, do I need to a adaptor for bike racks such as Thule and Yakima ?

This hitch supports a 2" bike rack. If your bike rack is smaller, you will need to buy an adapter.
