Menma doesn't have MSG in the jar with it. It's dried, then fermented bamboo shoots, just soaking in the brine.

Should this be refrigerated after opening?

It is best to be kept refrigerated to keep the flavor..

In the ingredient list, it specified that the soy sauce contains wheat, a key ingredient for regular soy sauce.

Is it fibrous hard to chew?

It depends on your reference point. It is bamboo shoot, so it has some degree of fiber but I don't find it especially hard to chew. I would liken its texture to meat in terms of chewability.
