It is rated at 1/2 hp, 13 amps - will it work with a 3/4 hp moor with a nominal rating of 8.5a @ 110v?

Thanks for your question.
As you mentioned, we rate the Sludge Boss float switch at 1/2 HP 13 amps 120VAC.
A 3/4 hp pump will run nominally at 8.5 Amps @ 110VAC, but at startup or under load, the amperage draw of the pump will exceed the circuit rating of the float switch, which will cause premature failure of the float switch wiring and the Honeywell microswitch inside the float.

The easiest work around for your application is to use a contactor or relay.

Will this float work in place of a septic products inc (spi) 20a702 pump down float switch?

According to the Spec sheet for the 20a702:

The float referenced from SPI is a control duty float that is made to be tethered. The Sludgeboss is internally counterweighted and does not require a tether. 
For the Operation to Pump Down, cap the blue wire coming from the sludgeboss. Let us know if this answers your question.

Question 3

I used this to replace my "high" float in a 3 float system (high, low, alarm).  the affluent level never reaches the low float.  replace both floats?

I have a Berkeley lift pump 5 horse 240 volt ,will this work for our application?

In that application, you need the Sludgeboss to control a relay or starter, and the relay or starter will control the pump. 240 volt applications have 2 hot legs, each 120V. Thats how they make the 240 Volts. Its really -120V and +120V, the difference between the two is 240 Volts. You need both those HOT legs to be opened and closed at the same time. Search amazon for B001KGSJ74. Also if it is an existing pump, your pump likely already has a contactor or starter on it.
