Replacing levenger with 8, 3/4" discs. product description says this has eleven 3/4" discs. i only count 8 in the photo. are there 8 or 11 please?

Mine came with 11 so that it works with the smaller 8 ring notebook and the larger 11 ring notebook.

What are the dimensions?

dimensions: 8-1/2 in. X 5-1/2 in. X 1/4 in.

From the left edge of the disc to the far right edge of the cover, how wide is this notebook? I want to know if it will fit in my lab coat pocket.

No, it won't. It is larger then an 8-1/2 X 11 sheet of paper.
