I would never use a metal file on glass. There are diamond-coated ones available and I would recommend finding a set of those.

Do the rectangular 5mm x 1mm files cut on the thin (1mm) edge?

The straight-sided, flat-ended ones cut on one thin edge but not the other. The pointed ones cut on both sides.

I need very precise files for extremely tight and fiddly spaces, im wondering how thick these files are, particularly edges/tips?

The flat files range around 1.6 x 5.6 x 7.6 mm. the length is about the same in all of them the thickness varies for file type. ( round, triangular etc. )
