Is the pump variable speed?

No but the input voltage is 12vdc-24vdc. Comes with 12 vdc 7 amp power supply

is this one for 110 or 220? if it is for 110, how many watts in order to get a converter?

This is 110v. We do sell 220v version.

will this work for maple syrup? 200 degrees

Probably but would not recommend it. As it will ruin the pump that was ment to filter WINE. Also at that temp will melt the tubing and plastic parts inside that will A break the machine and B contaminate your syrup.
