Q: If I put 30 volts in will the output side be 5 volts without attaching this to a arduino?

No this doesn’t change the voltage. You can use it to switch on and off the 30v load using 5v (if it supports 30v)

Q: I just received my item. is there a picture or schematic diagram on how to assemble this kit? which way/direction does the mosfet go into ckt board?

The placement of components is printed on the circuit board. The thick white line across the middle of board is the heat sink side of the mosfet. The thin white lines are outlines of components.

Q: once assembled, is there room to attach a heat sink?

Yes, I did not have any trouble attaching a heat sink to mine. One thing to keep in mind on this kit, is that the chip/board can only handle a limited amount of current. I believe the specs note approximately 2.5 to 3.5 amps. The mosfet can handle up to 30 amps. Do some research on that board to verify maximum current. But this is a handy and compact kit that works great with an arduino project.
