Q: What is the thread count of these

No where in the packaging information was stated the thread count, however they are advertised as 100% microfiber.

Q: Are they truly deep fitting? Our mattress is a gull 14" high and sheets are hard to fit without sliding off.

We dont have any sliding issue with are sheets... I really like them and plan to get in more colors

Q: Why are the interior pillowcase seams not sewn??? This was not mentioned in the product description. I wouldn't have purchased had i known this fact.

I believe those are pockets to keep your pillows from falling out. If you're talking about something else you might have a defective product.
