Do they work with star citizen?

Yes they do! Any PC flight related game (Space sim, flight sims, even driving sims. They have a selector that allows you to use them for throttle and brake if you place racing games.). Basically any PC game.

How come this costs $50 more than the msrp and everyone else?

It's not a Prime issue. There is a shortage of flight simulator hardware, as well as video cards, so many sellers on Amazon are overcharging for this stuff. The going price for this item is $569 at the end of March, 2021. It's available at pilot supply sites and B&H at this price. Cheaper rudders are, for the most part, unavailable at this time.

Do the pedals have incremental press. I mean if I press the pedal halfway will it send half power, Such as when i'm driving a car it would apply half?

Yes, they behave exactly as described. Each pedal has its own axis for toe press as if braking in a car. The third axis is the rudder style movement. They have the option to disable the input on the rudder axis for true car style driving as well.

Can these also be used as gas/brake pedals for racing, like some other pedals (CH) can? Thanks!

Yes, on the plug there is a switch between an airplane for flight and a car for gas and brake.
