ZWILLING Four Star 10-inch Chef's Knife

I am a typical home cook without any formal training. I thought it would be a waste to spend a lot on knives, but this knife completely changed my philosophy. This knife is excellent. After the first use of chopping vegetables for a stew, I have wanted to cook more. I also look forward to trying new recipes and ways to put my knife through its paces.This workhorse knife feels powerful in my hands, and makes me feel confident in my meal preparation. I can see the difference a knife makes in efficiency and quality of preparing meals. I have not had any problems with keeping it sharp. The knife is heavy enough for serious chopping, but light enough for extended use. I did not want to spend a lot replacing all my knives, but after experiencing the quality of this chef's knife, I have added the other Henckels versions of the Santoku, utility, paring, and bread knives to my wish list.One word of caution: This knife is huge. I received it as a Christmas gift, and even though I asked for an 8" chef's knife, I was given this 10" beauty. I am not complaining, but I have found it to be larger than what I am accustomed to using. Sometimes it can chop into other foods nearby. I figure trained chefs likely do not have concerns, but duffers like me will find this knife slightly larger than optimal for their needs. I also put the Henckels 8" version on my wish list, and once I get it, will use this 10" knife for large cutting jobs and for holiday carving of hams, turkeys, and prime ribs.

Brought this to complement an existing knife set. It does a great job and is very sharp and slices well.

Just the perfect knife. I use it at work every day! Perfect balance, light to medium weight. Super sharp. The German steel is incredibly hard! I have owned this knife for over a year and have not needed to sharpen it on a stone yet. I hone it on my steel, but have never sharpened it. Grip is very comfortable, fits hand, does not slip.Incredibly well designed and manufactured. Just the perfect knife.

Very very surprised the blade shattered. No of us ever seen a blade fail like this, even by miss-use. Finding the missing metal pieces in the food was a very very long and unsuccessful ordeal. Eventually got it back when a customer called us to let us know (not a good call) that they found it.Knife’s 3rd day in the kitchen. Chef is totally impressed (not good). Said he never seen that in his whole career in kitchens. He didn’t expect that from a Henckle product either. Not the German line at least.

The knife is well balanced and feels good in your hand. The edge however, is very brittle and will chip when honing on a steel.

Because I have used the 8-inch version of this knife for the last 35 years, I was confident about ordering the larger version. It has performed exactly as I expected.

We have had this same knife for over 36 years. We bought a new one since the one we had was not as sharp after years of sharpening it. After a month the new knife less sharp than the one we had. Just noticed I am 3 days past of returning it.

This purchase was to replace the same knife which was purchased over Twenty Years ago. The old knife was dropped and the tip broke off. I've smoothed the broken tip out with my dremel tool and it's still in service as a back up knife. The new one is just like the old one was when it was new. Razor sharp and ready for action. Worth The price. She's A Keeper!
