Q: how thick is the copper?

It is copper tape, about as thick as duct tape and it is great stuff

This is a tape. Once you remove your guitar strings and pick guard, you can use this to tape the inside of your guitar's body cavity to shield it from RF signals, etc. If you need installation tips, there are some pretty good YouTube videos to guide you. I always watch a few of those before I start doing anything, then sometimes write down the steps I am going to follow just to keep me straight.

Q: Is one roll enough for the back of the pick guard and both front and back cavities of a Stratocaster?

I play bass with no pick guard I used it on my pick ups if your going to do all that I would buy 2 to be safe

Q: would i need this for active emgs pups

EMG pickups are extremely resistant to external interference. You would probably find that additional shielding is not necessary at all. However, it can't hurt anything if you do use it.
