Q: How thick is the spine of the knife?

It's 1.65 mm where the bolster should be (there is no thickened bolster); about 1.5 mm halfway to the tip, and 0.5 mm at the tip. I've had this knife for seven years; use it often; dropped it numerous times onto on a granite counter and on a tile floor, it has never broken or chipped. I use a diamond knife sharpener rod to keep it sharp. FYI: 1mm = 0.0393701 in ~ 3/64"

These have been great knives for cutting virtually everything you would use a chef's knife for. Meat, veggies, raw potatoes, etc...it does well with all. Ours is well over a year old now.

Ergo Chef Universal Edge Guard the blue one fits mine perfect. The handle will stick out but the blade is completely guarded.
