Q: hi si this a good alternative for sugar in baking - is this what is used in sugar free cookies?

In my opinion, this is one of the best sugar alternatives for baking. It is not quite as sweet as sugar. 1 cup of this is about as sweet as 2/3 cup sugar. It also has an almost mint like cooling effect that is more pronounced in some foods. I often combine it with stevia extract because I find it gives it the added sweetness without making the cooling effect more pronounced.Splenda is also a good option for sugar free baking, but it is not as natural as erythritol and stevia.

Q: Why is Anthony's erithritol half the price of its competitors? Is the quality lacking in some way shape or form? Additives?

I order the 5 lb bag every month. It is not inferior in any way. As a matter of fact, I have tried a more expensive brand and went right back to Anthony's. I would imagine that they are able to keep the cost down because of the volume of sales and they have other sku's besides Erythritol and I have noticed cheaper than their competitors on almost everything they sell. I follow a Keto diet and not one time has my blood glucose risen. I try not to be a Brand snob but I am and use their products all the time!

Q: Is this stuff high-heat stable, that is, can it be used in canning?

I know I bought it for cooking and baking because the other product didn't allow baking with it, You will need to adjust the amount that you use. I would try using sugar raito to erythritol and taste to make certain that its to your tasting.
