How do you get it opened once sealed??

Just flip up the latch and use it to pull the lid open; the seal is exceptional, but not so tight that the lid doesn't open easily.

Would this hold 5lbs of coffee?

We get the 28oz and it won’t fit all of it. It holds most of it but there’s always a small amount left over. And if your not careful and try to fit it all in, where it closes dips down and the coffee spills out

Can i store it in the refrigerator with my coffee?

Moisture--like oxygen, heat and light--are enemies of fresh coffee. Storage of coffee in a refrigerator or freezer, especially if the container is removed for use and replaced every day, could create condensation even in an airtight container because of fluctuating temperatures. In addition, coffee is hygroscopic, meaning it absorbs moisture from the environment. Unless the container in which the coffee is stored is absolutely, guaranteed,100% airtight, the coffee will absorb moisture from the refrigerator/freezer and any odors and/or flavors accompanying the moisture. Therefore freezing or refrigerating coffee is not ideal.
