Can this be used on wire shelving in refrigerator

Maybe, the material is thin so it could make the sheet slide between the wires.

What side goes down? The smooth or bubble side?

I put the bubble down on glass. It still slides but food ( liquid) I’d not getting stuck to the bubbles. Think it’s your preference. I use them to tell other family members when items are because when they look they can never find it haha.

How much do these darken the interior? They look rather pastel, but still seem to prevent light getting all the way throughout the frig?

They are actually pretty bold in color but I don't think they darken the interior. I have glass shelves and they help prevent scratching. They are really easy to wipe off.
