It has several. My hubby accidentally threw the book away but I had looked through and saw some. I use my grandmas recipe just scaled down.

We gave this item as a gift so we haven’t tried, but as I recall it came with a hand crank. So I think the answer is YES 👍🥵

Not that I know of. I don't think this machine is built for that.
